Thai chickpea curry with kale
Zutaten (für 4 Personen)
2 tbs Vegetable oil
150 gr shallot
10 gr Garlic
4 dl Coconut milk
2 dl Vegetable stock
2 tbs Currypaste(thai)
2 tbs Soy sauce
1 tbs Brown sugar
800 gr Chickpeas
250 gr Kale
400 gr Rice
100 gr Tomato diced 10x10
10 gr coriander

Vorbereitungsmethode

  1. Fry the shallot in vegetable oil . Add the garlic, coconut milk and vegetable stock  and bring to a boil.
  2. Add the curry paste, brown sugar , soy sauce and chickpeas and let simmer for 10’.
  3. Add the kale portions and heat until defrosted and heated through
  4. Finish with coriander and tomato dices.
  5. Serve with rice
