Stew of beans with sweet potato and grilled Haloumi
Składniki (dla 4 osób)
500 gr Sweet patato diced
400 gr Kidney beans
200 gr Red onions
150 gr Red bell pepper
1 tS Chili pepper
1 ts cinnamon
2 ts Paprika powder
20 gr Garlic
35 gr Spring onion
10 gr Chili pepper diced
1 tbs Tomato concentrate
1 tbs Brown sugar
2 pc Haloumi slices

Sposób przygotowania

  1. Mix the chili pepper with the sugar and a little bit of oil and marinade the haloumi in the fridge.
  2. Stir fry the onions until soft but not colored, add the bell pepper, garlic , chili , sweet potato and tomato concentrate.  If too dry you can add a little bit water or vegetable stock.  Let simmer for 5’, then add the spring onion.
  3. Grill the haloumi in the oven and serve on top of the vegetable stew.
