Eggplant lasagna -
Quinoa salad with tomatoes and nuts
Ingredients (for 4 people)
- 1 kg Quinoa white and red (art 81465)
- 50 g Green celery cube (art 2501)
- 150 g Feta cheese in cubes
- 10 grilled and chopped nuts
- 200 g Tomato quarters semi-dried (art 9763)
- 50 g Parsley (art 5118)
- 50 g Onion dices (art 3816)
- 1 dl olive oil
- Juice from 1 lemon
- 20 g garlic dices (art 5166)
- Pepper and salt

Preparation method

Steam the quinoa and the green celery cube for 5 minutes. Let it cool in a bowl.

Add the feta cheese, nuts, semi-dried tomatoes, parsley and onion cube to the bowl.

In a smaller bowl, mix the olive oil, lemon juice, salt and pepper. Pour this sauce over the quinoa and mix together to serve.
